It’s the second day of Spring but Mother Nature obviously hasn’t noticed.
The weather forecast looked great for sugaring. The days were supposed to be above freezing and the nights just below. The sap had been running, but has stopped for a hefty snowstorm. We spent days in the woods running new lines and tapping the maples. The wood is stacked floor to ceiling and the new sugarhouse is done! Now we wait…oh, how we are looking forward to sitting by the heat of the wood fed arch, as the sap boils, releasing the smell of maple into the air. We dream of just sitting and reading in the warmth of the sugarhouse as we wait for the sap to morph into thick, golden syrup. Then, there’s no time to rest. It needs to be drawn off, filtered, and bottled up. In the end, it will be fun and exhausting and delicious! Come on, Mother Nature! Let’s get crackin’!
